- 250 g pasta (spaghetti or bucatini)
- 150 g guanciale (or pancetta)
- 1 whole egg + 1 egg yolk
- 100 g parmesan cheese (or pecorino romano)
- 1 teaspoon freshly ground black pepper
- Salt to taste
Instructions
- Cook pasta in a large pot of boiling salted water.
- In a bowl, mix the eggs, freshly grated Parmesan cheese and black pepper.
- Place chopped guanciale into the pan and fry until golden brown for about 6 minutes.
- If the pasta is almost cooked (al dente), add it straight from the pot to the pan with bacon. Pasta water also helps to create a creamy sauce.
- Turn off the heat, then add a mixture of eggs and parmesan cheese. Start mixing well immediately.
- Finish with extra parmesan cheese and freshly ground black pepper and enjoy!
Notes
If your bacon contains less fat, you can add olive oil to the pan at the beginning. Otherwise, the fat will dissolve nicely and no oil will be needed.
