Meat and vegetables
- 320 g ground beef
- 400 g udon noodles
- 2 tbsp vegetable oil
- 1 broccoli
- 5 cm piece of ginger
- 2 cloves of garlic
- 1 shallot
- 2 spring onions
- 2 tbsp sesame seeds (toasted)
- 1 tbsp chili flakes
- Sriracha (Optional)
Sauce
- 2 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tbsp oyster sauce
- 2 tsp honey
- 1 tsp sesame oil
Instructions
- Blanch the chopped broccoli in boiling water for about 5 minutes.
- Heat oil in a wok and add sliced shallot, white parts of the spring onions, ginger, garlic, and chili flakes.
- Push everything to the sides of the wok and add your ground beef. Don’t move it too much, sear it on high heat until nicely brown and break it up. Then add your blanched broccoli.
- Soak your udon noodles in slightly boiling water for a minute or until they start to separate. This takes no longer than one minute so don’t overcook them.
- Transfer udon noodles to the wok and pour the sauce over them. Mix nicely to coat the noodles.
- Serve with some extra sesame seeds and a little bit of sriracha sauce, if you like it spicy.
Notes
You can either toast the sesame seeds before adding them to the pan or just add them to the pan after searing the meat.
