Nut Pastry “Nussgebäck” – German Dessert Recipe

Description

It’s a popular dessert in Germany known as “Nussgebäck” or “Nusshörnchen”. You can find it in almost every bakery in Germany but it’s worth it to make them at home. It’s actually not that hard and the result is delicious!

Ingredients

Scale
  • 500g flour
  • 250ml warm milk
  • 1/2 cube yeast
  • 50g sugar
  • 1 egg
  • 60g soft butter

 

FILLING:
  • 200g ground hazelnuts
  • 150g ground almonds
  • 3 tbsp sugar
  • 3 tbsp brown sugar
  • Pinch of cinnamon
  • 50g melted butter
  • 50ml milk

1 egg yolk + 1 tbsp milk for eggwash
100g powdered sugar + 3 tbsp milk for glaze


Instructions

  1. In a bowl of the stand mixer, combine milk, sugar, yeast and egg and start mixing. Add half of the flour and butter and let it mix, then add the rest of the flour and mix until the soft dough is formed.
  2. Form the dough nicely folding the sides in and rubbing around in a circle creating a nice ball. Lightly grease a bowl and place your dough in. Cover with a damp towel and let it rise in a warm area for at least 45 minutes.
  3. Meanwhile, prepare your filling. Add ground hazelnuts, ground almonds, 3 tbsp of sugar, 3 tbsp of brown sugar, a pinch of cinnamon, melted butter, and milk into a bowl and mix well.
  4. Knock the air out of the dough and place it on a lightly flowered work surface. Roll the dough out thinly into a rectangle. Spread the nut filling over the entire dough.
  5. Roll up the dough starting from the long side. Cut the dough into 4 cm pieces. Press a stick (or some dull and thin object) along in the middle of each piece to form a nice shape.
  6. Place the pieces on a rimmed baking sheet tray lined with lightly greased parchment paper. Cover with plastic wrap and let them rise again for about 20 minutes. Give them a nice egg wash and bake in a preheated oven at 160°C (320°F) for 20 min.
  7. Finally, prepare your glaze. Mix in a bowl powdered sugar and milk. When the nut pastries are finished, let them chill for at least 10 minutes. Pour the glaze over them and garnish with some crushed almonds.

Notes

Let your little nut pastries chill before eating. I know it’s hard!
