Garlic is an amazing ingredient (one of my favorites) that has many uses in our kitchens. For some recipes, garlic is essential, while for others it will give the necessary robust flavor. I use garlic almost in every dish. You can use it in pasta dishes, stews, with fish or in soups.
Garlic oil is a great way to use garlic in a versatile way. Essentially, making homemade garlic oil is very easy and fun. In addition, it has a universal use.
How to make garlic oil
I am using olive oil for this recipe. You can also use vegetable oil, but olive oil works perfectly here. We only need two basic ingredients, garlic, and oil. However, it is not bad to use chili peppers or chili powder. I like to add a little bit of chili powder for extra flavor.
Garlic needs to be fried to kill the bacteria. So never make oil with the raw garlic! Use the whole bulb of garlic. You can add the whole cloves of garlic into the hot oil, or you can cut them beforehand (in half or in quarters). However, don’t chop them too thinly, otherwise, your garlic will burn.
Cook the garlic over low heat for about 10 minutes or until it turns a little bit brown. It can burn pretty quickly, so be ready to turn off the heat right away. Let it cool completely before adding it to the bottle or jar.
How to use homemade garlic oil
You can use homemade garlic oil for a good stir fry or for making pesto. You can finish your salads or pastas, which will provide an amazing extra flavor. Garlic oil can also be used for pizzas or as a dipping for bread. Just drizzle it on your classic Italian bruschetta and you will be amazed, how delicious it is!

- 1 bulb of garlic
- 250ml olive oil (or vegetable oil)
- Pinch of chili flakes
Instructions
- Peel the garlic cloves. You can also use some garlic skins, but it’s not necessary.
- Pour the oil into a wok or a saucepan. Place over very low heat and add your garlic. In with chili flakes.
- When it starts to gently bubble, keep on the low heat and cook for about 10 minutes, stirring occasionally (with a wooden spoon).
- Turn the heat off and let cool completely. Transfer oil and a couple of cloves to a bottle or jar. Store refrigerated for about a month.
Notes
You can add a few chili flakes or chili powder.
Do not forget to fry the garlic to kill the bacteria.
