This asparagus wrapped with ham and cheese is a great idea for a simple and quick lunch. The asparagus season is finally here. And it comes with a lot of good recipes.
There are many tasty ways to cook asparagus. One of them is these fantastic asparagus rolls, which you can have ready in less than 20 minutes.
How to cook asparagus in a pan
Green asparagus is best suited for this recipe. If possible, try picking a bunch of asparagus with thinner spears.
Use two spears for each roll. If your asparagus is a little thicker, you can also use only one.
Before wrapping the asparagus with ham and cheese, boil it in gently boiling water. But only for a couple of minutes. Three to four minutes is just enough.
After that, put it immediately in ice water for a while to prevent further cooking. After this step, your asparagus will be soft, but at the same time nice and crunchy.
Roll them up
Dry the asparagus and start making the rolls. Take two pieces and wrap them with one slice of cheese and ham. Then pierce them with a toothpick that will hold your roll together.
One toothpick should be enough. If not, feel free to use two. Just be careful not to eat them later.
Last time I enjoyed this delicious asparagus wrapped with ham and cheese so much that I almost gobbled up a toothpick. I should probably eat a little slower.
In the end, just cover the rolls with flour, egg and breadcrumbs. And then all you have to do is fry the individual rolls in oil.

Ingredients
For 6 asparagus rolls:
- 1 bunch of fresh asparagus (12 spears)
- 6 slices of ham
- 6 slices of cheese (gouda)
- 2 eggs
- 8 tbsp (or 80g) flour
- 1 1/2 cup (or 180g) breadcrumbs
- 6 tbsp vegetable oil
- Toothpicks
- Salt and pepper to taste
Instructions
- Wash the asparagus under cold water and snap off the wooden ends.
- Place the asparagus in gently boiling water for about 3 minutes. Strain and then transfer to ice water.
- Dry the asparagus. Take two stalks of asparagus and wrap them with one slice of cheese and ham. Use toothpicks for holding.
- Now cover the rolled asparagus with flour, then in an egg, and then coat with breadcrumbs.
- Heat the oil in a pan and fry the rolls until golden brown, on both sides for about 4 minutes. Serve the asparagus wraps with baked or mashed potatoes.
Notes
Do not discard the snapped woody ends. You can use them later for a stock or soup.
Place the finished asparagus rolls on kitchen paper, which absorbs excess oil.
